Butter matured with buckwheat koji


Organic butter from the Uckermark region of Brandenburg, along with our signature buckwheat koji paste, make up this otto classic. The buckwheat koji helps the butter mature and gives it a nutty, umami note. As more time passes, the deeper and more flavorful it becomes, as the butter continues to ‘ripen’ with cheesy notes.  


At otto, we serve our koji butter with sourdough bread from Sofi and pickles as an appetizer. We also use it for baking, frying, and assembling our other dishes, over regular butter.

Very ripe koji butter is great on pizza, pasta, roast potatoes, or popcorn.
